Modern technology preserves the gastronomic tradition developed over the centuries. The modern version of Mortadella is a smooth mixture of lean pork meat and prime back-fat. This is mixed, seasoned with salt, black pepper and spices keeping to the original Bolognese recipe, and then cooked, cooled and despatched to the various sales outlets ready to be savoured in its entirety.
